HEALTHY LOADED VEGGIE NACHOS!
What a favourite, you cannot go wrong with this one, 10/10 on flavour and wholesomeness!
+ Cut a whole large sweet potato into circles and bake it with some oil and salt until soft + In a baking dish add the cooked sweet potato on the bottom of the dish + Add 1 chopped red onion, 1/2 can lentils, 1/2 can chickpeas, chopped cherry tomatoes, chopped capsicum (I used 1/2 a green and 1/2 a red), jalapeรฑos, some good quality grated cheese ontop (donโt go overboard!)
+ Bake for 20 mins until cheese is melted and crisping + Once cook add avocado, paprika and lime
