Peanut Butter & Berry Choc Cups

I can confirm.. they are as good as they look! Keeping with my obsession with berries lately (if you haven’t yet noticed they seem to feature in every recipes these days), I just love how sweet they are and their antioxidant properties which everyone needs more of in their diets! #foodismedicine
Super simple recipe if you like delicious sweet treats that doesn’t involve any fake processed ingredients! -
-Bottom Layer- + melt 1 block of Lindt 85% dark choc (go as dark as you enjoy). I added about a tsb of coconut oil once the choc was melted.
+ pour into your muffin doilies (this recipe makes 6 if your greedy or more if you want them thinner) Pop in freezer for about 15 mins until frozen -
- Second Layer- + mix together about 6 tbs of peanut butter together with a tsb coconut oil and add as second layer (approx 1 tbs of pb per portion). pop back in freezer until frozen
- -Third Layer- + mix approx 1 cup of frozen or fresh raspberries (organic if you can) with approx 1 tbs chia seeds. Mix together and set for about 10 mins until melted and mixed through. Add as third layer, pop back in freezer until frozen
- - Top Layer- + melt 1/2 block of your dark choc of choice and add as final layer. This layer is optional based on how greedy you feel 🐷
Freeze again until set.

Best way to eat them is about 15 mins after taking them out of the freezer when the berries start to melt.. HEAVENLY 🤤
