Shakshuka
Easily my favourite weekend breakfast if you haven’t yet noticed, thanks to my beautiful hubby who has perfected the recipe and makes it for me❤️. I love all things Israeli cuisine and this by far is the best breakfast out there (zero exaggeration), and so incredibly wholesome!! Everyone needs this recipe in their repertoire, so I am here to help ☺️
In a pan add:
+ 1/2 diced brown onion
+ 1 big juicy tomato diced + 1/2 red capsicum
Let it brown, then add:
+ 1 tin diced tomato + 1 tbs tomato paste + generous amount of salt & pepper
+ 1 tsp paprika
Let it cook for a few minutes stirring
Then make small divets for the eggs to crack into.. proceed to crack 4 eggs in the pan evenly spread out - Cover pan and let sit for 3- 5 minutes until the eggs are cooked through to your liking.
+ Add goats cheese and parsley ontop and let it cook in for another 2 minutes.
