Quick & Easy Tofu Soba Salad πŸ™ŒπŸ» An awesome wholesome lunch or dinner idea (I’m having mine tonight for dinner).. it’s really nice and light, vegetarian + vegan + dairy free, has a great range of veggies to make your gut happy, tofu and edamame is the rich plant protein source and a beautiful creamy sauce to bring it all together. Recipe:

* Serves 2

Step 1: prepare your tofu
I am loving the woolies already marinated tofu for laziness reasons! I used the honey and soy one and just put it in the oven for 15 minutes, then chopped it into cubes, it’s absolutely delicious if you can’t be bothered to marinate tofu yourself!!

Step 2: soba noodles
Cook your soba noodles in boiling water for 4 minutes

Step 3: edamame
+ Cook your edamame in boiling water for 4 minutes, I used one large handful of the frozen edamame in their shells and popped them out once boiled.

Step 4: Prep your your raw vege
+ 2 handfuls of lettuce chopped
+ 1/2 red capsicum thinly chopped
+ 1 cucumber thinly chopped
+ 1 carrot grated

Step 5: make your dressing
In a jar mix together:
+ 1/2 tsp minced ginger and garlic each *LAZY TIP: I have been buying the minced ginger and garlic in a jar which saves me so much time!
+ 1 heaped tbs tahini
+ 2 tsp tamari/soy
+ 1 tsp maple syrup
+ 1 tbs water
+ Dash of salt

Add it all into a bowl and give it a good toss and add sesame seeds & chopped avocado on top 😘😘
