blueberry & banana muffins

BLUEBERRY + BANANA MUFFINS 🤤 Simple, Delicious, Wholesome & Fluffy.. what more could you want in a muffin? I can’t tell you how much I love these, I have been munching on these as a morning + afternoon snack all week and also a great brekky when your on the run. (very kid friendly too!)

Recipe:

+ 1.5 cups rolled oats blended into flour
+ 1/2 cup almond meal (or replace this with all oats if you wish)
+ 2 large very overripe bananas (overripe is the key for natural sweetness)
+ 2 eggs
+ 1 TBS rice malt/maple (optional)
+ 2 tbs almond milk (milk of choice)
+ 1 Tsp vanilla
+ 1.5 Tsp baking powder
+ 1 cup blueberries (I prefer frozen but can use fresh)

Method:
In a bowl mix all dry ingredients, in another bowl mix wet ingredients (not the blueberries yet), then mix all together. Once mixed well, add your blueberries and stir.
Add to your muffin tray/liners and bake at 180 degree until cooked through, about 20-25 mins depending on your oven (poke a knife in at about 18 mins to see how they are tracking)
They should turn out nice and fluffy!! Once you think they are 90% ready take them out and leave them to cool to continue cooking through.
