Mexican stuffed sweet potatoes!

Mexican stuffed sweet potatoes for lunch today, WOW! Surprisingly super quick to prep and packed with the goods of course, because who wants to get to dinner time and realise they have eaten no veggies all day... Step 1: place your two whole sweet potatoes in the oven, pierce it with a fork 3-4x on each
Step 2: Filling - in a bowl mix together 3/4 avocado, chopped tomatoes, 1/2 can of black beans, pumpkin seeds, hemp seeds, chilli flakes, salt, pepper.
Step 3: remove sweet potatoes from the oven, cut in half length ways, using your fork scrape the flesh with a fork to lift it up and move it around.
Step 4: add your fillings on top of each potato, drizzle some tahini on top and add some parsley.
