Miso Eggplant πŸ†

This recipe is officially the easiest most delicious way to make eggplant! I have always struggled to cook eggplant but i persevered because it has an abundance of vitamins and antioxidants that I really wanted in my diet.. I have finally perfected it and wanted to share it with who ever else likes good food πŸ™‹πŸ»β€β™€οΈπŸ€—

Score the middle of the eggplant into cubes, then let it bake on a pan for about 5 minutes on each side (skin & flesh side). It’s ready when the flesh is soft through.
In a bowl mix:
1 tbs miso paste
2 tbs mirin
1 tbs macadamia oil
1/2 tbs maple syrup
Once combined spread on the eggplant and then bake in the oven for 5-10 minutes until it starts to bubble.
Add sesame seeds and eat 😘😘 .
