My favourite salad on repeat πŸ™ŒπŸ» Swipe πŸ‘‰πŸΌ to see how EASY a delicious salad can be!

Honestly, there’s no better lunch in my opinion then a massive bowl of fresh vege with a delicious dressing and some yummy extras! #eattherainbow

Each time I make this I swap out the protein source to get a good variety in and so I’m not over consuming the same thing (mostly when it comes to animal products like eggs, tuna & salmon).

I am also now getting fresh produce boxes delivered each week from @yourfoodcollective so it allows me to mix up the vege with whatever I get in my box ( love that because diversity in our diets is key and often we get complacent about eating the same thing, the more variety = the more range of nutrients we get!)

Salad deets πŸ‘‡πŸΌ

Base: Cos lettuce πŸ₯¬ (best lettuce in my opinion)

Chopped Raw Vege: Cucumber, cherry tomatoes, carrot

Extras: πŸ₯‘& olives (for some good fats!), pickles & sauerkraut (for some good gut bugs!)

Toppings: Hemp seeds, sunflower seeds, pumpkin seeds (always add seeds, they are nutritional power houses & add a delish crunch)

Protein: Roasted chickpeas! I rinse and drain one can and add some olive oil, sprinkle of paprika & cumin ontop, mix it around in a baking dish and bake for 20-30 mins until crispy & crunchy!

Dressing: I mix together about 1 tbs olive oil, 1 tbs tahini, splash of balsamic vinegar and then enough lemon to get a nice consistency (stir it together & keep adding lemon until it gets to a nice thickness). You CANNOT go wrong with this dressing!!
