Veggie grain free bread

This is my all time fave recipe I make on repeat for two reasons; itโ€™s SO quick & easy to make and SO beyond delish! I cut it up and keep it in the freezer then chuck in the oven to crisp (or toaster if you cut it thin enough) and spread avo ๐Ÿฅ‘ and sprinkle himalayan salt whenever I feel like it ๐Ÿ˜‹ So handy for breaky, snacks or lunch packed with other goodness.
This is gluten free, sugar free, packed with vege.. pretty much addicted!!

5 organic eggs
1.5 cups almond meal
3/4 cup arrowroot flour
1 grated carrot
1 grated zucchini
1/2 tsb bicarb soda
1.5 tsb apple cider vinegar
Mix it all together, add to a loaf tin, top with pepitas or any seed of choice and bake for 50 minutes on 180 degrees .
