MANGO HALOUMI SALAD
There’s nothing like a fresh salad on a hot summers day! This is my first time using mango in a salad and I’m officially obsessed!! Have I been living under a rock my whole salad making life? 🤦🏻♀️
This combo is a must try 🥰🥰
Base: white cabbage thinly sliced & cos lettuce. Mix through a splash of olive oil, salt & lemon juice.
Next layer is your roast veggies: I roasted half a pumpkin with some mini colourful carrots with olive oil & salt in the oven for 30 minutes.
Next layer is your fresh raw vege: I cut up a punnet of cherry tomatoes, 2 cucumbers and 1.5 avocados and Lay them out in the lettuce base.
Then I fried up 2 packets of halloumi on the pan with some olive oil & lemon juice until crisp.
Next is slicing into cubes the mango cheeks from 2 mangos.
I topped it with pine nuts that I roasted on a pan for 10 mins until browned.
For the dressing I mixed the juice of a whole lemon with a good share of olive oil & some sea salt. Mix it all together and poured it over.
