chickpea cookie dough bites

Happy Friday Friends, it wouldn’t be a Friday without a little dose of delicious baking inspo for the weekend.
I was really unsure how these were going to turn but, but WOW! they were a real delish surprise!! These are not like cookies, they are gooey’er and fluffier, an absolute MUST HAVE. They are super high in protein and have no processed crap in them, sweetened with dates and 100% peanut butter. What more could you want?

Recipe:
Start by wizzing up in your blender:
5 dates with 1/3 cup water to make a date like paste.
Then add to the blender:
+ 1 tin chickpeas rinsed and drained
+ 1/2 cup peanut butter
+ 1 tsp vanilla
+ 1 tsp baking powder
Once wizzed up, add
+ 3/4 pack of chopped 85% Lindt and mix it through (or your chocolate of choice)
+ with a spoon, scoop up a ball of batter, add onto baking paper and bake on 180 degree for about 12 minutes 😘
