Baked Green Pea Falafels šŸ’š
If you havenā€™t yet noticed, I am forever on the hunt to find the perfect vegetarian ā€˜ballā€™ or ā€˜pattieā€™ to add to my salads as an extra protein veggie hit. Todayā€™s concoction was super simple yet so rewarding šŸ‘šŸ¼These falafels are packed with parsley, peas and chickpeas, a winning combo if you ask me! Definitely worth trying out as a beautifully nutritious meat free protein option.

Ingredients:
+ 1 tin chickpeas, washed and dried well with paper towel
+ 1/2 cup frozen peas, defrosted
+ 4 tbs oat flour (rolled oats blended for 10 seconds to become flour) (you could also use almond meal or any flour of choice here)
+ 1/2 cup parsley
+ 1 clove garlic (if you love garlic throw in 2 cloves)
+ 1 tsp cumin
+ 1 tbs lemon juice
+ 1 solid tsp salt & pinch of pepper
+ 1 tsp chilli flakes if you like spice šŸŒ¶

Add everything to a blender or food processor until itā€™s ground down and combined well. Donā€™t mix for too long otherwise it turns into hummus (yum but not for this purpose)
+ Grab about a tablespoon worth of mixture and roll into cylinders or balls if you prefer, I thought I would change things up with the cylinders!
+ On a lined baking tray, spray each one with olive oil spray to ensure it browns nicely
+ Bake for 15 mins on each side (25-30 in total depending on your oven) on 180 degrees.
+ Enjoy with tahini and lemon in a beautiful salad šŸ˜˜
