LOADED Veggie Fried Rice
This is an absolute flavour bomb, yet so simple to make & of course jam packed with nutrients βοΈπ€€ Contrary to popular belief, fried rice is a really healthy balanced meal (when you make it yourself that is)!
With only one cup of cooked brown rice in this whole skillet, itβs more vege and protein (egg) than anything, yet extremely satisfying with fluffy brown rice in every mouthful keeping you super full!
Ingredients: * serves 2
+ 1 cup of brown rice, I used the @sunrice organic brown rice which has no additives
+ 1/2 brown onion
+ 1 large clove garlic
+ 1/4 chopped leak
+ 1 diced carrot
+ 1 diced red capsicum
+ 1 broccoli head, chopped finely
+ 1/4 cup frozen peas
+ 1/4 cup frozen corn
+ 3 organic eggs
+ 2 tbs tamari or soy sauce
+ 1.5 tbs sesame oil
+ 1/2 tsp salt
Toppings:
+ sesame seeds
+ juice of 1/2 lime
+ shallots
Step 1: veggies
In a pan fry up your onion, garlic & leek until soft. Then add your chopped veggies and cook whilst stirring for 20 minutes
+ Add your frozen peas and corn half way through
Step 2: Fry your Egg
Whisk and fry your eggs on a pan and then add to the veggie skillet once the vege are cooked through
Step 3: Rice
+ heat up your packet rice or make your rice, whichever you prefer.
Step 4: Combine
Combine your rice with the veggies and egg, then add tamari/soy, sesame oil and salt. Stir well for a couple minutes then remove from heat and serve
Step 5: Add your toppings for max flavour and crunch
