a wholesome omelette

Bringing you a super simple nutritious omelette to start the week. This is my regular Monday lunch at the moment. My weekly veggie box arrives on a Tuesday so this is a perfect quick lunch (or brekky/dinner) when I don’t have fresh ingredients but still need to get my nutrients in!

Why do I love eggs 🥚 so much?
+ rich in vitamins & minerals such as choline, B12, vitD, iron, folate, iodine & the list goes on!
+ great protein source that isn’t meat!
+ So easy to always have in the fridge and relatively long shelf life
+ I always buy organic & pasteurised when possible!!

Some great added nutrients to this omelette is the use of bone broth concentrate! I promise you cannot taste it when it’s in there! Currently using the @gevityrx original flavour, it’s grass fed & organic (just the way I like it) & a great support to our gut health!!

Another great nutrient packed addition are the @pimp.my.salad super seed mix that comes in a jar I keep on my pantry, it adds a delicious added flavour and crunch to almost anything! And packed with goodies from the seeds of course ✔️ ✔️

*Serves 1:
+ 2 organic pasteurised eggs
+ 1 cup of frozen spinach & kale combined (I buy Macro organic from woolies)
+ 1/2 tsp minced garlic
+ 2 tbs mozzarella (optional)
+ 1 tsp @gevityrx bone broth concentrate
+ 1/4 avocado diced
+ Good handful of super seeded mix from @pimp.my.salad

On a pan, add some olive oil & minced garlic, followed by your frozen spinach and kale. Simmer until they defrost.

In a bowl, whisk your eggs and add your bone broth concentrate and stir in with a pinch of salt. Pour over your defrosted greens and put the lid on for 5 mins on medium heat.

Add your mozzarella if you wish (I love the cheesy addition!) and cover for another 5 mins or so.

Flip half the omelette over and let it cook for a few more mins until it’s not runny.
Remove from heat.

Add 1/4 diced up avocado, handful of super seed mix from @pimp.my.salad and lemon juice as your vitamin C addition to help absorb the iron in the greens & for ultimate freshness.
