spinach Omelette veggie wrap

Wrapping up the long weekend with this super simple, colourful, nutritious spinach omelette wrap 🤤 This idea came from craving a big breaky burrito wrap, so I just made a super healthy version and it absolutely hit the spot! Definitely a new quick lunch fave! Also a great breaky option, high in protein, good fats, carbs & veggies👌🏼

Step 1: Make your omelette: Chuck a whole bag of spinach (about 2 cups) on the pan with some olive oil & lemon juice. Cover it for a few minutes until wilted. Then add 4 organic whisked eggs onto the pan with the spinach and cover again. Cook until it’s not runny and then fold it in half and cook for another minute or so.

Step 2: assemble your wrap
+ add avocado
+ peelings of carrot
+ sundried tomato strips
+ add 1/4 of the omelette
+ wrap & enjoy
