Bite sized Twix Bars

At all times I have a little healthy dessert in the freezer for when I need a sweet fix, but portion control for me is super important because I (like most hungry humans) have a tendency to over consume sometimes! These little twix bars are the perfect size to put your sweet fix at bay without over indulging!
They are bloody delicious if I can say so myself๐Ÿ™Š
On the weekend I did a little cooking demo at the retreat and it was a huge hit so I thought I would share the love ๐Ÿ‘‡๐Ÿผ In a bowl mix together:
+ 1/2 cup almond meal + 1/2 cup peanut butter
+ 2 tbs rice malt syrup/maple
+ 2 tbs melted coconut oil
I like to pick up all the batter and mix it in with my hands for a perfect consistency. Take small bits and shape into a rectangle.
Pop in freezer for 10 minutes or so until they are getting harder
Melt a block of 85% Lindt and dip one side of the bars in and then pop on a plate lined with baking paper. I then sprinkle some sea salt to make the flavour pop ๐Ÿ’ฅ
Freeze for another 20 minutes and enjoy ๐Ÿ˜Š ๐Ÿ˜˜
