Nori Rainbow Wraps

Hands down the quickest simplest most nutritious lunch!! *no prior prep needed, just 2 minutes to put it all together
Seaweed is seriously underrated when it comes to its nutritional value.. one of our best sources of iodine, a mineral that we are hugely deprived of in our diets! But super important for our thyroid function and therefore metabolism (& sooo much more!)
Between two wraps I spread out 1 tin of wild caught tinned salmon (essential omega 3s!!), 1 tbs tahini (amazing source of calcium), 2 heaped tbs’ beetroot & ginger sauerkraut (gut superfood, feeding our good bacteria), 1 shredded carrot & zucchini with a peeler & 1/4 of capsicum sliced finely.
Lay it out & wrap it up and you will be so satisfied, bloody delicious and incredibly wholesome 🙌🏻 Some other awesome add ins would be avocado, tuna, tofu, herbs, seeds, spinach & any veggie you fancy really!
