Fluffy Sticky Date Muffins ❣️❣️
Wow 🤤🤤🤤 you need to save this recipe!! A beautiful & light healthier spin on the traditional sticky date that doesn’t leave you feeling heavy or sickly after, a perfect baking activity this weekend 😘
RECIPE 👇🏼
Step 1: Making the date mix
In a small pot add;
+ 1 cup pitted dates (10 medjool dates)
+ 1/3 cup rice malt syrup (or honey or maple if you prefer)
+ 1 cup water
Simmer for 10 minutes whilst mixing
+ Add 1 tsp baking powder and stir for a minute or two
+ Add mixture to a blender and blend until well combined
Step 2: Mix dry ingredients
In a bowl add the below ingredients & mix:
+ 2 cups almond meal
+ 1/2 cup arrowroot flour
+ 1 tsp baking powder
Step 3: Mix wet ingredients
In a a bowl add the below and mix:
+ 2 eggs
+ 1 tsp vanilla
+ 2 tbs melted coconut oil
+ The blended date mixture
Step 4: combine wet and dry mixture and mix well
+ add in muffin liners in a muffin tin and cook for 20 minutes on 180 degrees, you could need another 5 mins, depends on the oven!
Step 5: make your topping
In a blender add the below ingredients until smooth:
+ 1/4 cup coconut cream
+ 1/2 cup pitted dates (5 medjool dates)
+ 1/4 cup rice malt syrup
Step 6: Add topping to the muffins and top with some chopped almonds, enjoy 😘
