Chickpea & Zucchini & Carrot fritters
The perfect addition to my salads & dinners this week.. an awesome veggie protein option addition 🙌🏻
- In a bowl add:
+ one tin of organic chickpeas blended
+ 1/2 cup of almond meal
+ 2 organic eggs
+ one grated zucchini & carrot
+ salt, pepper, chilli flakes + parsley
Mix everything together and roll, then add into a pan with your oil of choice, then flatten with a fork to take the shape of fritters. Avocado 🥑 is a must addition 😘
