GREEN PESTO PASTA

This is hands down the simplest vege+vegan wholesome dinner option that is absolutely DELICIOUS, I promise!! Swipe 👉🏼 to see how easy it is ☺️

Step 1: boil 2 cups of pasta: I use buckwheat pasta because i love the texture, it’s naturally gluten free and a high in protein!

Step 2:
+ drizzle olive oil on the pan
+ Add 1/2 tsp minced garlic
+ Add 1/2 cup frozen peas
+ Add 1 cup frozen kale (4 frozen balls of it) I use woolies macro organic kale, great to always have in the freezer!
+ Add 1 cup chopped zucchini (1 whole zucchini). Let this all cook for about 10 minutes..

Then add:
+ 1 tbs pesto - I used my homemade pesto that you can find the recipe of from my previous post! It’s a real winner and great to always have handy in the fridge. Option of course to buy a premade pesto.
+ 1 tbs lemon juice
Mix it all together and then add your pasta.
+ Add a generous amount of salt & chilli flakes

* Serves 2 with left overs for lunch the next day!! (So really I guess that’s 3!)

Now to make this cheesy and creamy I used @pimp.my.salad cashew ‘Parmesan’. It’s a real winner and an awesome replacement for cheese! There’s nothing but real ingredients in there, with nutritional yeast making it have a cheesy texture, an awesome vegan option!

Alternatively you can always add Parmesan!
