Nutty Popcorn Rocky Road

This is a real wow factor when you take the first bite, a super easy recipe you cannot not love, perfect for a weekend treat!

+ 1/3 cup chopped walnuts
+ 1/2 cup chopped almonds
+ 1/3 cup pumpkin seeds
+ 2 cups popcorn
+ 2 blocks 85% dark choc
+ 1 heaped tbs coconut oil
+ 2 heaped tbs peanut butter
+ 2 tsp maple/rice malt syrup

+ In a bowl add all of your chopped nuts and maple/rice malt syrup and stir. Then pop it in the oven on 180 degrees for 15-20 minutes until they start browning (but not burning!)
+ melt your dark chocolate and coconut oil together, then add your peanut butter with it and stir it all together until itโ€™s liquid and smooth.
+ Popcorn time: either make your popcorn on a pot or use store bought popcorn. Use 2 cups of popped popcorn and add it to the mixture
+ In a deepโ€™ish dish lined with baking paper, add your nuts, seeds, popcorn to the dish, then pour your chocolate mixture and pat it down as much as possible with a spatula so it sticks together.
+ Freeze overnight or for 4 hours until cutting if your feeling impatient and hungry
+ Chop into squares and enjoy ๐Ÿ˜˜
