10 Minute No Cook Veggie Tacos 🌮

This was the quickest whip together lunch today that was so easy and tasty it would be rude not to share. Black beans was the power house protein source in this meal, you simply take them out of a tin and mix them with lots of other vege and your set! I love eating a variety of plant protein through out the week, black beans are a real fave for their protein, fibre and iron content! A great meat free alternative 👌🏼

To make your filling, in a bowl mix together: *serves 2
+ 1 tin black beans washed & drained
+ 1/2 red capsicum
+ handful of chopped cherry tomatoes
+ handful chopped red cabbage
+ 2 tablespoons of sauerkraut
+ 1/4 cup frozen corn thawed
+ handful chopped parsley
+ 2 squeezes of lemon juice (or lime but I didn’t have any)
+ 1 tbs olive oil
+ generous pinch of salt
+ 1/2 tsp paprika

I used @latortilleriaau corn tortillas which I just tried for the first time and a big fan! They are non GMO with only two ingredients: corn and a dash of salt ✔️ Heat them up in the oven for 5 minutes to make them soft.

+ Add your filling into the tortillas, followed by a dollop of guacamole (mandatory!!)
+ to make your guacamole I just mash one avocado and add some lemon/lime/juice, paprika and salt.
+ Add some Parmesan cheese on top 🧀
