Green Tofu & Soba Noodle Bowl πŸ’š

Wow 🀀This was a real throw together dinner tonight that took about 25 minutes and turned out absolutely DELICIOUS, too good not to share the love πŸ’“πŸ’“ An awesome meat free dinner rich in protein, a nice variety of vege and some good quality carbs πŸ™ŒπŸ» (officially obsessed with soba noodles, first time cooking with them and totally hooked!!)

Recipe:
Step 1: sautee the veggies
+ throw a whole broccoli and approx a cup of chopped green beans to a pan with one minced garlic and some olive oil. Sautée it for about 15 minutes until soft
+ Next, add approx 250g tofu chopped into cubes to the pan
Step 2: make your sauce
+ In a cup add 3 tbs tamari sauce or soy sauce, 1/2 tsp grated garlic, 1/2 tsp grated ginger, 2 tsp honey, sprinkle of chilli flakes. Mix it all together
Step 3: Add 3/4 of the sauce to the pan with the tofu & vege and let it look for another 10 minutes whilst the flavours melt into it
Step 4: whilst that’s cooking add your soba noodles to a pot of boiling water and cook for 10 minutes
Step 5: Assemble
+ Add your soba noodles to a bowl followed by the tofu and greens and top it with the remaining dressing.
Toppings: I added sesame seeds, cucumber, finely cut radish & nigella seeds πŸ‘ŒπŸΌπŸ‘ŒπŸΌ
