Quinoa Salmon Summer Salad

This is what I call the epitome of NUTRITIOUS & DELICIOUS! I thought I would share today’s lunch because it was such a winner and I want to share the love if your needing some salad inspo!

I am LOVING quinoa at the moment, it is the most underrated seed! It’s a delicious plant source of protein, fibre and a good dose of good carbohydrates, so it’s a double win to add to salads to keep you full for hours!

Ingredients:
+ TBS of pumpkin seeds
+ TBS of sunflower seeds
+ TBS of walnuts
+ TBS of hemp seeds
+ 1/3 cup of quinoa
+ handful of cherry tomatoes
+ 1 cucumber
+ 1/4 avocado
+ 1 small tin of wild caught salmon (great dose of omega 3s)

Step 1: Roast your nuts & seeds in the oven with a splash of salt for approx 15 mins until golden

Step 2: Cook your quinoa: I used 1/3 cup of quinoa (washed & drained).. if you can soak it prior that’s idea to help with digestibility!
To cook quinoa, double the quantity of quinoa to water, e.g. add 2/3 cup of water to a pot and boil. Once bubbling turn it right down to cook slowly until water is absorbed. Add some salt once cooked and mix through!

Step 3: Chop your vege: cucumber, tomato, avocado

Step 4: Add it all together: quinoa, chopped vege, salmon & nuts & seeds

Step 5: Make your dressing: 1 tsp of tahini mixed in with 2 tsp olive oil and 1 tsp balsamic vinegar. Drizzle over and enjoy 🥰
