Peanut Butter + Blueberry Pods

I couldn’t decide which flavour so why not have both? I must say, I think peanut butter is my fave, you just can’t beat it!!
These are the perfect raw treat to bring in the weekend to nourish your body whilst still Giving your sweet tooth what it’s wants.. I love all of these ingredients, all wholesome and sweetened naturally yet has sooo much flavour 🤯 .
Step 1: make the base
In a food processor/blender add:
+ 1 cup almonds
+ 1 cup oats
Remove it from the blender
In the blender add:
+ 5 dates
+ 3/4 cup water
+ 1 tsp vanilla
Whizz it up and then add the almond and oats back in the blender and wizz again. .

Step 2: assemble your base
You will need a muffin tin and muffin liners.. divide the base up evenly using about 1 tbs per hole, press the mixture flat into it and then create a half hole with your fingers so the filling can sit nicely in the middle with the sides coming up around it. Push the mixture up the sides to create the shape of the muffin liners

Step 3: make your filling
Peanut butter filling (my favourite 🙊)-
+ melt one tsp coconut oil and add 3 tbs peanut butter to a bowl and stir.
+ add the filling to the middle of the cups *This makes 6 cups
Berry filling-
+ in a bowl add 1/2 cup blueberries and approx 2 tbs chia seeds + 3 tbs water. Let it sit for 10 mins then add it back into your blender to break it up to a beautiful consistency.
+ add it to the middle of the cups in the holes
Step 4: make the chocolate topping
+ melt 1 block of dark chocolate along with one tbs coconut oil.
Add it to the middle of each pot leaving the edges out.
Pop in the freezer overnight and enjoy 😘😘
