RAINBOW QUIONA SALAD

Absolutely obsessed with today’s lunch creation I had to share! This salad is a nutritionists dream 🙏
The perfect meal prep salad as it has a bit of everything your body needs! Nourished with lentils, chickpeas, quinoa, sooo many different types of vege, nuts and seeds.. a winning nutritious combo!! Prep once, eat for days 👏🏼👏🏼 .

Recipe:
Step 1: (before you start the salad prep)
+ Cook 1 cup dried quinoa with 2 cups of water on the stove or in microwave + Place a whole bulb of garlic in the oven drizzled with olive oil for 20 minutes on 180 degrees until soft and slightly caramelised

Step 2: make your salad
In a bowl add the below Ingredients:
+ 1 can chickpeas
+ 1 can lentils
+ 2 diced capsicums (one red, one yellow)
+ 1 diced cucumber
+ Large handful chopped kalamata olives
+ large handful chopped sundried tomatoes
+ 1/2 diced red onion

Step 3: make your delicious dressing:
In a bowl mix together:
+ Mash up the whole head/bulb of the roasted garlic you made earlier + Juice from 2 lemons
+ 2 tbs olive oil
+ 1 tbs tahini
+ 1 tsp balsamic
Step 4: Dont forget the toppings (extra nutrient crunch):
In a pan roast whole almonds, pumpkin seeds and sunflower seeds with a dash of olive oil & seasalt.. sprinkle ontop, the more the merrier 😘😘😘
