Peanut Butter & Jelly French Toast

The perfect lazy weekend brekky ❣️❣️A nostalgic breakfast for me from my childhood made much healthier replacing the white processed bread with a beautiful gf loaf, and replacing the sugar filled peanut butter and jam with all natural wholefoods! A beautifully balanced protein rich breakfast that couldn’t be more delicious really👌🏼

+ Bread: I used my favourite gluten free loaf from @wholegreenbakery
+ French Toast: I just soaked each piece of bread in 2 mixed up organic eggs and let them char on the pan with cinnamon on either side. For extra crisp I then added them into the oven on grill for 10 minutes
+ Toppings: a generous amount of peanut butter with blueberry jam (on the pot I simmer 1/2 cup blueberries with about 3 tbs chia seeds and 1/4 cup water.. after 15 minutes of simmering I added it to the blender to make it extra jammy)
I also topped with ground flaxseeds for extra nutrients (omega 3 powerhouse) and chopped cashews and more cinnamon 👌🏼👌🏼
