VEGETARIAN CHILLI “CON CARNE”

The tastiest, warmest bowl of vege goodness 🙌🏻 This bowl has a diverse range of plants 🌱good carbs 🍠 beans and legumes which gives you a perfect dose of plant protein ✔️ This batch makes loads, an awesome meal prep option for the week ahead ☺️ Ingredients:
+ 1 red onion
+ 1/4 leek
+ 3 cloves of garlic
+ 1 tsp cumin seeds
+ 1 tsp ground cumin
+ 1 tsp paprika
+ 1 tsp chilli flakes (optional)
+ 1 diced red capsicum
+ 1 diced carrot
+ 1 tin kidney beans
+ 1 tin chickpeas
+ 2 tins tomatoes
+ 1 diced sweet potato
+ 1/2 cup frozen corn

Method:
+ Dice your sweet potato and add it to a baking tray, drizzling it with olive oil, paprika (about 1 tsp) and salt. Bake until cooked through for approx 45 mins-1 hour
+ In a pan add olive oil, garlic, leek, onion & cumin seeds and stir for 5 minutes
+ Add carrot and capsicum to the pot
+ Add your herbs and spices and stir for a couple of minutes
+ Add tinned tomatoes, kidney beans and chickpeas + Cook for 30 minutes on a simmer until thick and delicious
+ Add your baked sweet potatoes and corn, stir through for a couples of minutes
Enjoy with 🥑 and seeds! I roasted sunflower and pumpkin seeds and sprinkled some nigella seeds too, with a generous squeeze of lime 😘
