VEGGIE & LENTIL LASAGNE
Hands down, one of my favourite on repeat dinners ๐๐ป๐๐ป An awesome meat free & naturally gluten free (no pasta involved) dinner packed with SO many hidden vegetables you wouldnโt even know they are there! A very timely post as itโs #meatfreeweek , I am all about trying to reduce our animal intake (not eliminate) and add more plants into our meals where ever possible. This ticks all the boxes โ๏ธ RECIPE ๐๐ผ
Ingredients:
Layers:
+ 1 large sweet potato (peeled)
+ 1 large eggplant
+ 2 large zucchini's
Filling:
+ 1x 400g tin lentils
+ 1 brown onion
+ 3 cloves garlic
+ 2 tins crushed/diced tomatoes + 1 grated carrot
+ 1 grated zucchini
+ approx 5 leaves basil
Topping: + 250g of ricotta
+ 5 cherry tomatoes
+ Basil
Step 1: chop & bake your vegge to make your layers
+ Chop your sweet potato & eggplant into circles and your zucchini length ways & bake in the oven with some sprayed olive oil and salt for approx 20 minutes on 180 degrees until soft, not crispy
Step 2: While your vege is baking, prepare your filling.
+ Add olive oil to the pan and fry up your garlic and onion until soft
+ Add your grated carrot, zucchini, tinned tomatoes & lentils and stir well.
+ Leave it to simmer and add salt, pepper and chilli (as much as you can handle), cook for 20-30 minutes whilst casually stirring.
Step 3: Create your lasagne
+ In a deep baking dish cover the bottom of the dish with sweet potato so that you can no longer see the bottom. + As your second layer, add 1/3 of your lentil mix on top of the sweet potato
+ Add eggplant as your second layer and then another 1/3 of your mixture
+ Repeat until you have used all of your vege and mixture. I like to have the top layer as a vegetable and not the mixture so that ithe ricotta sits nicely ontop
+ In a bowl, add your ricotta and approx 2 tbs of water and mix, this thins the ricotta out making it more easily spreadable and go further! + Spread the ricotta over the whole lasagne's top, add some tomatoes ontop for some extra prettyness
+ Bake on grill setting until the lasagne is looking crispy to your liking, i usually start on fan forced for 15 mins and grill for a further 15 mins ๐
