Veggie & Tofu Rice Paper Rolls

New favourite lunches this week: Rice Paper Rolls with Tofu & Vege 🙏 because they couldn’t be quicker & easier (& cheaper) to make!!
Step 1: Tofu Marinade: add in a bowl some Tamari & Honey & mix it together. I dont measure the quantities, rather just taste test it to get to the perfect taste, of you want it sweeter just add some more honey! Then add your chopped up firm tofu (long slices) into the mix to marinade for 10 or so minutes.
Pop on pan with all the sauce in the pan and cook until as firm & crispy as you like.
Step 2: Assemble rice paper rolls- get your rice paper and place each one on a plate with a bit of water to wet it. Then place onto a flat surface and add your fillings in the middle: avocado, grated carrot, sliced cucumber, capsicum and sprinkle with some hemp seeds. Then add your cooked tofu, I add 2 pieces each. That’s all I had on hand but feel free to load it with as much vege as you have in the fridge! (Iso rationing here)

Then roll them up! I start by taking two ends and bringing them together so that nothing falls out! Then get one of the other ends, bring it over to cover the ingredients and roll it! (Haha I don’t know if that makes sense, but if in doubt YouTube it!)
Step 3: make your dipping sauce- in a cup I added 1 tsb peanut butter, tamari sauce & chilli flakes. Add enough tamari to make it a sauce like consistency.
