Warming Lentil Soup
There is nothing like a bit batch of nourishing, wholesome soup to help us stay healthy in iso ๐ Are you getting your 5 serves of vege in a day right now? Itโs so easy to forget or not prioritise because shit it going down in the world right now, but I encourage you, for your health, to try your best!! This big batch of soup is perfect to help you get there, FILLED with everything your body is needing right now!! Make a big batch and eat once a day ๐
The process to make it is on my stories, for exact quantities see below ๐๐ผ
+ drizzle some olive oil in a pan & fry up 3 chopped garlic cloves, as much ginger as you can handle (I used almost half of one) & 1/2 onion.. add 1 tsp of turmeric powder (fresh & grated is ideal if you have it!)
+ add in your vege: 1 whole sweet potato, 1 broccoli, 2 carrots, 2 zucchiniโs.
+ add your liquid of choice, enough to cover the vege.. I used the chicken broth Iโve been making to make it extra wholesome! Find a good quality stock if you donโt have any broth.
+ Add your soaked raw lentils & chickpeas.. I soaked over night, minimum 4 hrs I recommend to avoid bloat & optimal digestion!
+ simmer for as long as you can, I cooked for 3 hrs on a very low heat, minimum cooking time I suggest is 45 minutes ๐
Dip a piece of your favourite bread toasted! Mine is a piece of gluten free rosemary bread from my fave gf bakery @wholegreenbakery
