Sweet Potato & Feta Muffins
Seriously, this is the tastiest savoury muffin ever!! The perfect snack & a great way to get your vegge in without knowing! If you feel like baking this weekend these are worth it, and a great little gift too to send to a friend that could do with a little TLC ☺️
Recipe:
In a bowl mix dry ingredients together:
+ 2 cups almond meal
+ 1/4 cup arrowroot
+ 1.5 tsp baking powder
+ good grind of salt
In a bowl mix wet ingredients together:
+ 1 grated carrot and zucchini (draw out the water of the zucchini before adding to the bowl)
+ 1 cup mashed sweet potato (boil and then mash)
+ 1/3 cup broken up feta (I prefer breaking it up with my fingers as apposed to cutting into squares)
Combine dry and wet ingredients and add into your muffin holders, sprinkle with some more feta if you are feeling cheesy. This should make 12 muffins!
Bake on 180 degree for approx 30 minutes or until cooked through! I suggest after 25 minutes poking it through with a knife to see how they are tracking! A slower oven may need up to 40 mins to cook through 😘😘
