Zucchini Bread

You would never know by eating this that the main ingredient is Zucchini!! Food is all about tasting bloody delicious whilst also giving your body nourishing fuel to feel good every day and this ticks the box! My mantra is to pack in your veggies to anything and everything 👊🏻This bread is loaded with zucchini but sweet at the same time (some may say it’s more of a healthy cake ☺️) 👇🏼
In a bowl mix:
+ 2 eggs
+ 1/3 cup melted coconut oil
+ 1/2 cup rice malt syrup/maple
+ 2 tsb vanilla
.
Then add and mix:
+ 1.5 tsb baking soda
+ 1 cup almond meal
+ 1 cup gluten free all purpose flour
+ 1 tsb cinnamon
.
+ Grate 2 zucchini’s and put in a tea towel and squeeze until all the water comes out! Then add to mixture & mix & top with whatever seeds you have on hand!

Add to loaf tin with baking paper and cook for about 50 mins on 180 degrees or until it’s no longer gooey inside
